Wilted Spinach With Warm Feta and Olive Oil Dressing

This is a simple salad that can be augmented with grilled chicken strips and crusty bread to make a heartier meal.

Ingredients

10 oz. fresh spinach; 1/2 red onion, sliced into crescents; 4 oz. feta, cubed or crumbled; 3 tbsp. olive oil; 1/2 tbsp. Red wine vinegar; Salt and pepper

Instructions

1. Heat olive oil over medium high heat in a medium pot. 2. Place onion slices into oil and season with salt and pepper. Cook for 5 minutes until onions begin to soften. 3. Add feta and vinegar and continue cooking until feta begins to soften. 4. Turn heat off, but leave pot in place. Add spinach handfuls at a time and stir to wilt spinach. As more room becomes available in the pot, add more spinach. Spinach should be wilted but not cooked through.
