Smoked Salmon and Fennel Pasta

An easy way to cheat on a good seafood dish. Leeks are a good substitute for fennel too.

Ingredients

1 fennel bulb, sliced into 1/8 inch slices; 4 oz smoked salmon; 1/2 cup sour cream; 1/2 teaspoon dried dill; 1/2 teaspoon salt; 1/4 teaspoon pepper; 2 oz. feta cheese, crumbled; 1 cup penne pasta, uncooked; 2 tbsp. olive oil

Instructions

1. Boil salted water over high heat. 2. When the water is boiling, add the penne to the water and cook according to the package. 3. While the pasta is cooking, cook the salt, pepper, dill, and fennel in a skillet over medium heat. 4. Add the sour cream to the fennel mixture 2-3 minutes before the pasta is done. 5. Combine the fennel mixture, pasta, and feta cheese. 6. Top with roughly cut or torn smoked salmon.
