Lasagna in 45 minutes? It’s doable and pretty delicious

Ingredients

28 oz. can diced tomatoes, undrained; 3 cloves garlic, minced; 3 tbsp. olive oil; 1 cup parmesan, grated; 3-4 cups pre-grated mozzarella; 1 cup ricotta cheese; 16 egg roll wrappers; Salt and pepper

Instructions

1. Preheat oven to 450 degrees. 2. Heat oil in a medium sauce pan over medium high heat. 3. Cook garlic in oil for 30 seconds to 1 minute. 4. Add tomatoes, salt, and pepper and cook thoroughly for about 10 minutes. 5. Stir in parmesan and ricotta until thoroughly mixed. 6. Coat a 9x9 baking pan with oil. 7. Working in layers, place 4 egg roll wrappers in the pan, then sauce, then mozzarella. 8. Repeat the layering and finish with a layer of sauce and mozzarella. 9. Bake uncovered for 15 minutes. 10. Let rest for 10 minutes. 11. Serve with buttered crusty bread and a simple green salad (like arugula with red wine vinegar and ricotta vinaigrette).
